Abstract

The purpose of internships is to obtain a better understanding and valuable experience from a professional kitchen operation in the F&B hospitality industry that may not be acquired in classes. Since Common Grounds Surabaya is one of the most well-known café chains and is currently situated in an exclusive area of Surabaya with a lot of visitors, hence, it was chosen as the internship site. Common Grounds Surabaya offers its interns the opportunity to gain experience in three different sections of the restaurant: Sweet, Sauté, and Grill. The author learned the fundamentals during the internship, including how to manage ingredient stocks and required tools, process orders, prepare ingredients and cooking bases, how to store everything properly, and fully understand kitchen operations. Learn soft skills such as how to work in a team, efficient communication, practice discipline, as well as have a thirst for knowledge.
