Abstract

This report is a final step to complete the academy program in Ottimmo International Master Gourmet Academy Surabaya. This report is based on six month of the author internship at Pavillion Restaurant at JW Marriott Surabaya. The author has been done the internship program from 8th February 2022 until 9th August 2022. The author inchrage in a three different section for 6 month, such as Noodle and Steam Section, Pasta Section, and Pizza Section. The author chose JW Marriott Hotel Surabaya as their training location because it is a five-star Luxury Brand amongother Marriott’s International subsidiary and one of the oldestluxury hotels in Central Surabaya that is very successful. In addition, the author hope can reach many experience from JW Marriott Surabaya, and also be able to discover their passion in the world of cooking and gain insight of a real working field in professional kitchen at five-star luxury hotel.
