Abstract

This report is a final step to complete the academy program in Ottimmo International Mastergourmet Academy Surabaya. The writer had to do internship for 3 month in Food And Beverage industry to improve both skill and knowledge that have been learned in the school as part of Namaaz dining team. Namaaz dining restaurant is the first restaurant who bring molecular gastronomy to Indonesia and Namaaz dining only served Indonesian food, the kitchen of Namaaz Dining divided into 3 department which is Hot kitchen, cold kitchen, and Pastry. The favorite dish in season 8 “Cinema” as the current season is Ayam bakar Madiun which has a delicious taste and rich of spices. In Namaaz dining we have a family meal which is a lunch for all the staff, and the sous chef made a schedule randomly. He will choose three people, And those who already chosen will cook once a week. This experience is such a precious thing because the writer can learn many things about Indonesian food and widen the knowledge also. The writer hopes in the future Namaaz dining will train the training better than before to reach their goals and gain all the knowledge and experience in every department.
