Abstract

This Internship Final report is to finalize the 3 year of study in Ottimmo International Surabaya; and as a trainee in Prana Resort Nandana, Koh Samui, Thailand for 6 months. This internship program is very important to the writer where the witer can implement their study into real-field practice. The writer started the internship program on November 1st, 2019 and finished on April 10th, 2020. In the first two months of the training period, the writer get to mostly do the preparation (mise en place), learning the menus, learning about the ingredients placements, helping the senior cooks, maintain the clenliness of the kitchen, being placed in the cold kitchen (to prepare fruit cuts, salad, cold cuts) etc. The writer also trained how to store the food ingredients properly, such as; date labelling, storing by first-in first-out method, secure packaging, how to prepare ingredients as well. Then in the rest 4 months of the training period, the writer was obligated to cook some dishes, help to teach in the cooking class with some guests, involved in events, deep cleaning the whole kitchen, checking the room, fridge, and freezer daily temperature, etc. It was a wondeful and memorable six months of experiences in my training period to prepare me to the real working indursty world. This internship program also helps me to build professional character that suits this creative industry.
