Abstract

This report is the last assignment that all students need to complete to receive their diploma from Ottimmo International Master Gourmet Academy Surabaya. The author had to complete a 5 months internship at the Holiday Inn Resort Kandooma Maldives to be able to make this report. At the resort the author had the opportunity to be placed at 3 different kitchen departments which are the a’lacarte restaurant, Cold Kitchen, and fined dinning. At the resort the author learned how to work with people from different races and cultures, how to work under pressure, learn how to serve guests, and most importantly learning about the HACCP. The work that was given to the author was a lot and hard at first but overtime it became easier because of the improvement that the author obtained by doing it every day. The chef there were also very kind to teach the author about the things that the author didn’t understand. In the future the author hoped that the skills, technique, and friendship that the author obtained from Holiday Inn Resort Kandooma Maldives can be implemented and other places that the author will work at.
