Abstract
This report is a final requirement to complete the academy program in OTTIMMO International Mastergourmet Academy Surabaya. The writer needs to finish the internship program for 6 months in the hotel or resort of their choice. In order to implement and develop hard skill and soft skill they have to face the real professional kitchen. The writer prefers to choose the internship abroad, because the writer required to challenge himself and also learn different food culture. The writer had a chance doing internship program in JW Marriott Phu Quoc Emerald Bay Resort & Spa, Vietnam. The resort itself have 5 different restaurants, each of restaurant have different responsibility and food style. While doing internship program, the writer faced a lot of problems and conflicts inside the resort but because of that the writer gain a lot of experiences. Not only learning different languages but also the culture the kitchen operational. The writer also learn how to communicate with the guest to know what the guest in terms of their needs. Communication and teamwork are very important inside the kitchen operation. While not only maintaining the quality of the food, but also ensured the food delivered in timely manner. The writer feels very pleased and gains great experience, hopefully all the experiences can be useful for the future.
