Abstract

Black rice and pumpkin seed cereal is a novel functional food product formulated to provide a nutrient-dense and health-promoting breakfast option. Black rice (Oryza sativa L. indica), known for its high anthocyanin content and antioxidant properties, is combined with pumpkin seeds (Cucurbita pepo L.), which are rich in protein, healthy fats, magnesium, and other essential micronutrients. This study aimed to develop a cereal formulation that optimizes the nutritional synergy between these two ingredients, while maintaining sensory appeal and shelf stability. Nutritional analysis revealed that the cereal is high in dietary fiber, plant-based protein, and bioactive compounds, with low levels of sodium and trans fats, making it suitable for health-conscious consumers. Each serving contains approximately 280 kcal, offering a balanced source of sustained energy suitable for an active lifestyle. The inclusion of black rice enhances antioxidant potential, while pumpkin seeds contribute functional lipids and micronutrients. With a projected selling price of 43,245 rupiah per 240g serving, this cereal represents an affordable and accessible alternative to conventional breakfast options, supporting heart health, metabolic balance, and energy management throughout the day.
