Abstract

Internship program is an important part of culinary vocational education since it gives students the chance to put their previously learned material to use in a real-world situation. Namaaz Dining Jakarta, a restaurant known as an Indonesian pioneer of molecular gastronomy, is one of the locations that provides a distinctive and demanding training experience. Every dish served at the restaurant incorporates art, science, and contemporary cooking methods under the "Fun Dining" theme. The intern participated directly in a variety of kitchen activities during the six-month internship, which took from January 2 to July 2, 2025. Preparing the menu, preparing the ingredients, and plating the finished result for the guests were all daily tasks. Additionally, through a Book Club session facilitated by Chef Andrian, the internship provided practical instruction in contemporary culinary methods including spherification, food matching, and liquid nitrogen. Additionally, the internship at Namaaz Dining gave me a great understanding of the value of discipline, collaboration, time management, and upholding strict hygienic standards. In order to produce high-quality food with accuracy and consistency, interns learnt how to handle pressure in a professional kitchen. In the dynamic field of contemporary cuisine, this experience provided a solid basis for cultivating a robust, innovative, and flexible work ethic.
