Abstract

Internship is a form of experiential learning in the industrial world that aims to develop practical skills and broaden students’ insights in accordance with their field of study. This report presents the implementation of a six-month internship at Mercure Hotel Samarinda, a four-star international hotel that is part of the Accor group, strategically located in the heart of Samarinda and known for its high service standards and modern facilities. Mercure Hotel Samarinda is a modern and elegant hotel, combining touches of local Kalimantan culture in its interior design. The hotel provides a variety of quality international and local food choices, served professionally through the hotels restaurants and services, such as Ivory Restaurant and SkyHouse Restaurant and Bar. ranging from traditional Indonesian dishes, Asian dishes to classy Western menus. The internship was divided into two periods, three months in the cold kitchen, focusing on breakfast preparation, and three months in the pastry section, focusing on producing various types of cakes and pastry products. This internship aims to deepen students understanding of cold food processing techniques, hotel standard breakfast service, and pastry production. Through this experience, students are expected to enhance their technical skills, discipline, teamwork, and awareness of hygiene and sanitation in hotel kitchens.
