Abstract
The Author's motivation for pursuing the internship is to gain a deeper understanding of Indonesian cuisine that is served in a new way, in a specific focus on the kitchens of the fine dining industry. Blanco par Mandif is an Indonesian fine dining restaurant located in Ubud, Bali, Indonesia. Each trainee at BLANCO par Mandif gets the chance to gain knowledge in six different section such as Aperitifs, Entree, Hot, Cold, Pastry, and Bar & Services. BLANCO par Mandif is only open by reservation. This restaurant exclusively offers set menu, which are offered in two different types of menus: Nusantara and Signature.
