Abstract

The author selected this internship program because the author wanted to learn and gain more knowledge about the culinary industry and how it operates. The internship program offers many advantages for Ottimmo International, Taj Exotica Resort & Spa, The Palm, Dubai, and future participating students. The author chose to do internship in Dubai because Dubai is one of the country renowned for its international luxury hotels and diverse food scene, provides a valuable platform for learning and professional development. This allow the author skills to be refined and gain exposure to global culinary standards. The internship provided the author with comprehensive exposure to professional kitchen operations, including the use of specialized tools and machinery, as well as proper storage techniques for various cooking ingredients. A significant part of the experience involved gaining in-depth knowledge about the process of transforming raw ingredients into finished, consumable dishes. Additionally, the author developed strong expertise in essential areas such as hygiene, sanitation, and food waste management. The skills and insights gained during this internship will play a vital role in supporting the author’s future professional growth. The author got placed in Pastry kitchen to learn for 6 months. Taj Exotica Resorts & Spa, The Palm, Dubai have 12 outlets. These restaurants serve dishes from different countries ranging from Arab, India, Japanese, Italian to Mexican.
