Abstract
The internship program is one of the graduation requirements for Ottimmo International Master Gourmet Academy students in order to produce high-quality graduates. Ottimmo has collaborated with various industries such as hotels, restaurants, cafes, bakeries, and various industries in the culinary field both domestically and abroad. Braud Artisan Bakery is one of Ottimmo partners which very famous in the field of bakery at Bali. Therefore, the author who likes Bali, chooses Braud as an internship place. Every trainee at the Braud Artisan Bakery had to joined all of the department and change it once in a two months. The Departments at Braud consist of Pastry Department, Lamination Department, and Bakery Departement. That made the author learn a lot about pastry, lamination, and bakery kitchen.
