Abstract

Recently, food business has become a very popular business and had increased rate in business sector. The increase of this food businesses has created a lot of competition among them. This competition between businesses make the competitive in attempting to be the best food business. But during these times, opening food business is not easy. They have to be creative and innovative in creating new and unique ideas that will make them be able to compete with other food businesess. Sushi is one type of food that many people like and said to have originated in China between the 5th and the 3rd centuries BC, as a means of preserving fish in salt. It was originally invented as a means of preservation when fermented rice was used to store fish. This was known as narezushi, but the rice was used primarily to encourage fermentation and was discarded so that only the fish was eaten. A later variant called namanarezushi has invented in the 16th century. It introduced the idea of using vinegared rice, which still enjoyed today, particularly in Japan ancient capital, Kyoto. Many Indonesians are scared to try sushi because they think sushi is made of raw fish and that it is unhealthy. That is why I’m trying to innovate by combining sushi with Indonesian dishes. As we know, Indonesian cooking is already enjoyed by Indonesians because of the spices. So this is one of the way I want to try to attract consumers and change Indonesians’ perspective that sushi is not only made of raw ingredients, but that it can be innovated with food from other nations. Other than that, Indonesia also does not have many restaurants that combine Indonesian cooking with sushi.
