Abstract

Culinary is one area that is very influential on everyday life. Currently, the increase in the culinary sector in Indonesia is quite developed and more and more people are opening businesses in the culinary field with various styles, for example, fushion food. Indonesia is a country that has a wide area coverage, where each region has food that is characteristic of each region. Regional food is one of the characteristics of a community group, regional specialties are a form of culture that is regionally characterized, specific, diverse, and the types reflect the natural potential of each region. For example, ayam taliwang is one of regional food from West Nusa Tenggara which is identical to its special seasoning, chicken taliwang is free-range chicken cooked with red basic spices and the addition of a few other ingredients that are boiled until the reveal water shrinks into a thick seasoning then the chicken is grilled and smeared with the seasoning on it and the rest of the other spices are mixed with chili for be the sauce. As a young generation who has big dreams in the culinary world, I want to develop special 4 foods from the East of Indonesia that have a distinctive spice taste and are not inferior to foreign foods. With my experience in the culinary world, it would be enough to convince me to be able to compete from zero.
