Abstract

The spread of Japanese culinary culture is highly accepted by Indonesians. Moreover, the taste of Japanese food matches the palate of the majority of circles in Indonesia. Seeing this trend, opening a Japanese-themed establishment will be an open opportunity, even for start-ups. In Indonesia, there are various restaurants selling many types of Japanese food. However, only a few specializes solely in one type of selection. To my experience, I would like to run a ramen shop after reading and watching documentaries about Chef Ivan Orkin. It is said that ramen is a broad space to showcase creativity since it has many varieties and there is no one formula for a great ramen. Single-themed restaurant also means mastery and focus, where the development of the ideas is quicker and more significant than the multi-themed ones. Therefore, running this ramen shop is a plausible choice.
