Abstract

The author must follow the training program for 6 month at Cuca Restaurant. In the first month, the author was given the opportunity to learn at the hotpass station. From there, the author learns how to place the right things by using FIFO (First In First Out), Communicate well with the staff, plating, the placement of plate and equipment, etc. And then the author had a chance to move to pastry station for about 4 month. The author learn so much lesson start from food labeling, pay attention about station cleanliness, distinguish between aoppropiate ingredients and spoiled ingredients, how to cut well and correctly, and learnto use all the equipment and to work step by step according to the standards set, etc. It was so memorable to working as a trainee at Cuca Restaurant for 6 Month. Very many experiences and important lessons were given, it also helped the author to add more connection in the culinary life, the author had a chance to participate many event and it was so much fun also helped the author to see more openly and clearly about the real world of kitchen work. Cuca Restaurant has a lot of section and the author also had a chance to helped and learned about other dishes and it is a great honor for the author to learn new techniques and recipes and to join their great team. They teach well and clearly, very friendly, and professional at work. It was a fun and unforgettable experience for the author.
