Abstract

This report presents the outcomes of the industrial training program undertaken at Novotel Samator Surabaya Timur, Surabaya, as part of the requirements for the Culinary Arts study program at OTTIMMO International Mastergourmet Academy. The internship aimed to provide practical exposure to a professional hospitality environment, enabling the student to apply theoretical knowledge, develop technical proficiency, and strengthen interpersonal competencies within the kitchen division. During the program, the student was assigned to the Hot Kitchen, where responsibilities included food preparation, production, plating, and adherence to hygiene and sanitation standards. The internship emphasized not only culinary skills but also teamwork, discipline, and problem-solving in a fast-paced operational setting. Through this experience, the student gained valuable insight into standard kitchen procedures, enhanced adaptability, and fostered a professional mindset essential for future careers in the culinary industry.
