Abstract

Pomélis is a hard candy innovation made from sugar, corn syrup, and filled with seasoned pomelo rind, offering a unique taste profile of sweet, sour, salty, and tangy flavors. Unlike conventional candies that use artificial flavorings or single-layer formulations, Pomélis features a dual-texture experience: a glossy hard outer layer and a chewy, nutrient-rich center. This product utilizes pomelo rind commonly categorized as food waste as a key ingredient, thereby promoting sustainability and reducing organic waste. The production process includes boiling the pomelo rind to reduce bitterness, flavoring it with lemon juice, sugar, and salt, and coating it with a cooked sugar mixture at 170°C. Sensory evaluation indicated that Pomélis has favorable sight, smell, and taste characteristics. Each piece of candy contains 25 calories and provides a source of dietary fiber from the pomelo rind. The product is packaged in moisture-resistant pouches and has a shelf life of 3 months under proper storage conditions. In addition, the selling price of Pomélis is Rp14,000/pack.
