Abstract

The rising cases of diabetes and high cholesterol have increased public interest in functional foods. This study developed a healthy cookie using moringa seeds and purple sweet potato. Moringa seeds provide complete protein, oleic acid, and phytosterols to help lower cholesterol, while purple sweet potato adds anthocyanins and fiber for blood sugar control. The seeds were soaked and boiled to reduce bitterness. The cookies had a slightly soft texture but were rated well for appearance, aroma, and taste. With a 2–3 weeks shelf life and low cost, the product shows strong potential as a functional snack. Each cookie serving delivers approximately 65.5 kcal and is priced affordably at around Rp 15,500 per piece. Keywords: Cholesterol, cookie bites, functional food, moringa seeds, purple sweet potato.
