Abstract

The purpose of this internship was to deepen the author knowledge and gain hands-on experience in the culinary industry, particularly within the hospitality sector of a five-star hotel kitchen. During the internship, the author was assigned to Palm Court Restaurant in several sections, including the cold kitchen, western section, and asian section, as well as had the opportunity to support the organization of various Food and Beverage events such as Cars and Coffee, Iftar, and Sunday Brunch. Through this internship, the author gained valuable insights into the hospitality and culinary industry, covering various aspects such as ingredient preparation, cooking processes, food presentation, guest service, and the implementation of hygiene and sanitation standards. In addition, the author learned to take responsibility for tasks, work effectively in a team, improve speed and accuracy in executing duties, and maintain the quality and presentation of dishes according to established standards. The internship experience at Four Seasons Hotel Jakarta provided invaluable lessons, not only in terms of culinary skills but also in professionalism, work ethics, and kitchen management.
