Abstract
The purpose of this internship was to apply the knowledge and techniques learned during class to a real-world professional kitchen setting. Shangri-La Hotel Surabaya is a luxury hotel known for its high culinary standards and diverse food and beverage outlets. This internship provided an opportunity to experience working in international hotel environment and understand the professional standards expected in a five-star kitchen. Throughout the internship period, Author was able to improve Author’s technical culinary skills, time management, teamwork, and adaptability in a high pressure environment. Author also learned the importance of discipline, consistency, and effective communication within a kitchen brigade.
