Abstract

This report is prepared as an accountability document for a six-month internship program conducted at Drool Bakery – Locaāhands Surabaya, from January to June 2025. The main objective of the internship was to provide students with hands-on experience in a professional bakery and pastry work environment. During the internship, the author had the opportunity to be actively involved in production processes, raw material management, product packaging, and display arrangement, both in the Bakery Lamination Room and Pastry Drool Section. This experience not only enhanced the author's technical skills but also shaped work ethic, improved communication abilities, and strengthened understanding of operational and hygiene standards in a professional kitchen. Through direct observation and active involvement in the production workflow, the author gained valuable insight into the importance of teamwork, accuracy, and adherence to work procedures. This report also outlines the organizational structure, task distribution, and strict hygiene practi author for a more mature and professional career in the culinary field.
