Abstract

Internship activities are carried out to gain valuable experience and new things about the world of F&B hospitality that are not necessarily obtained in school. Vasa Hotel Surabaya is the chosen internship location because it is one of the luxurious five-star hotels and is located in the heart of Surabaya. In Vasa Hotel Surabaya, there are various departments including pastry, 209 Dining, Chamas Brasil Churrascaria, Xiang Fu Hai, and Nagano. The author chose Xiang Fu Hai as a place to do an internship for 6 months. Xiang Fu Hai is a restaurant that sells authentic Chinese food. In Xiang Fu Hai, it is divided into two parts, namely hot kitchen and dimsum. The author chose dimsum because he wanted to increase his knowledge and skills about dimsum. During the internship, the author learned to make various types of dimsum, take care of the Xiang Fu Hai stalls, and understand kitchen operations. During the internship, the author also learned to solve existing problems and process food ingredients in large quantities, as well as the importance of cleanliness and sanitation of food ingredients.
