Abstract
The purpose of the author doing internship program is because the author wants to learn and explore various dishes from Thailand and learn how chefs work in professional kitchen, also for understanding kitchen flow in professional kitchen. Centara Grand Beach Resort Phuket is one of 5 stars hotel at Phuket, Thailand. Centara Grand Beach Resort Phuket has 5 restaurants such as The Cove (International), Barefoot Bar (snack and refreshment), Ripples (snack and refreshment), Splash Pool Bar (snack and refreshment), COAST Beach Club & Bistro (BBQ and grill), along with in-room dining facility. The author worked in The Cove and gained many experiences with various job desks from breakfast buffet, a la carte, to dinner buffet.
