Abstract
During the six-month internship at NAPLA Restaurant Surabaya, the main goal the author was to deepen the understanding of Thai cuisine, including ingredients, cooking techniques, and dish varieties. NAPLA was chosen for its reputation in modern Thai Fusion cuisine and strategic location. Training in the hot kitchen provided comprehensive experience in Thai food preparation. With operating hours from 10 am to 11 pm, NAPLA caters to diverse groups, allowing for learning in inclusive restaurant management. Over 50 Thai dishes, such as kuitiao khao mo and pad ka prao, were explored, along with the process of creating crispy pork belly. The internship also focused on learning the preparation and presentation of Thai tea, a customer favorite. Overall, the experience enriched the author’s understanding of Thai cuisine and restaurant operations. Keyword : Internship , NAPLA , ottimmo international
